Reading time: 2 minutes
Heads up, Madison! You’re getting a new Mediterranean restaurant in two locations in the near future. CAVA, a restaurant chain that has locations all over the country, will soon break ground for a restaurant in Clift Farm in Madison, and will open another in Town Madison.
The restaurant cain purchased Zoe’s Kitchen in 2018. Since then, the company has been converting locations nationwide.
Healthy eating is on the way
Cava was founded in Rockville, Md., in 2006 by first-generation Greek Americans Ike Grigoropoulos, Dimitri Moshovitis, and Ted Xenohristos. The chain operates about 80 restaurants across the country..
The Madison locations will be the first in Alabama.
CAVA specializes in build-your-own Mediterranean bowls and pita sandwiches, with tons of vegetarian options, like roasted sweet potato, falafel, and eggplant, as well as Mediterranean-style meats, including lamb meatballs, harissa honey chicken and braised lamb.
When will it open?
Although a definite timeline has not been established for the opening of the new Madison locations, both are expected to open in 2022 or early 2023.
