Pascal and Michèle Auburtin have lived in Huntsville for over 15 years and have fallen in love with the Rocket City community.

Before operating the Bridge Street and Valley Bend Le Macaron locations, Pascal worked in the automobile industry. Michèle has a passion for education and has worked for many years in the Madison City School District as a substitute teacher.

Although the Auburtins own the two Huntsville locations, Le Macaron French Pastries as a whole is a national franchise founded in 2009 by Rosalie Guillem and her daughter, Audrey Guillem-Saba.

Fresh pastries + coffee

The treats at Le Macaron are as fresh as it gets. Since they’re produced with all-natural ingredients, the macarons must be sold within 2 days to guarantee optimal flavor.

“We only use natural ingredients, and it makes a difference. When you bite into a macaron, the flavor stays in your mouth for several minutes afterward, and that comes from the quality ingredients.”

Pascal Auburtin, Owner, Le Macaron Bridge Street + Valley Bend

You’ll never find day-old pastries at Le Macaron. All croissants and baguettes are freshly baked and 50% off after 4PM to ensure nothing goes to waste.

Plus, their coffee is top-notch—never bitter and not too sweet. I tried the Egg Nog Latte, and it was incredible. You can even order ahead using their app and get rewards points for free coffee and treats.
