Reading time: 2 minutes
When it comes to dining out, Huntsville has a ton of options. This spring, the Rocket City is welcoming CO/OP Community Table + Bar—a new fine dining restaurant located in the downtown Embassy Suites Hotel. Keep reading to get all the details.
2 renowned chefs
Located in downtown Huntsville, CO/OP Community Table + Bar is a new concept from Atlanta-based Chef Marc Taft and the locally-famous Chef Luke Hawke. You might know Hawke as the culinary genius behind Huntsville’s Cotton Row.
Together, the two renowned chefs are opening a new bistro serving Southern ingredient-inspired dishes. Ingredients will be sourced from local farms and purveyors, and dishes will also be made with sustainable beef, pork, poultry and seafood.
The menu is the product of Taft’s culinary creativity and will be constructed by Hawke. CO/OP plans to make dishes with traditional cooking techniques, but with a modern twist. In addition to the exceptional food, the bar will feature modern craft cocktails, local brews and a chef curated wine list.

“Chef Luke was the obvious choice to helm the kitchen at CO/OP. I have always been impressed with his food and he is an industry veteran that understands the importance of the hospitality scene to Huntsville.”

The location
Atrium Hospitality‘s property, Downtown Embassy Suites Hotel, will be connected to CO/OP. You can expect this bistro to reflect the history of Huntsville with its warm aesthetic and thoughtful blend of modernity.
We’re excited about the spacious and covered patio with its own walk-up bar. The bistro is just a few steps away from the riverwalk, so its designed to enhance the natural surroundings.
If we haven’t sold you on this bistro yet, you’ll probably be glad to hear that the patio will feature live music as well.
