In June 2025, a new vinyl bar made a quiet announcement it would be opening in MidCity, debuting with a summer 2025 residency at the Lumberyard. Almost a year later, the long-awaited Perseus Sound Bar officially opened its brick and mortar on Friday, May 15 and it’s already elevating the food and music scene in Huntsville.

What to expect at Perseus Sound Bar

The mystery is no longer—Perseus is bringing mid-century modern and Mediterranean influences to a cozy corner cafe in MidCity. Locals didn’t wait to flood to the new space for the picture-perfect ambience (and handmade cannolis).
I sat down with owner Nick Quinn, the man behind more Huntsville favorites like Mad Malts, to learn about what’s been going on behind the scenes the last year.
TLDR: Here’s what to expect from Perseus
- 🍴 Rotating seasonal menu by Italian master chefs inspired by countries on the Mediterranean Sea

As for the aesthetic:
“I included tasteful, subtle nods to Ancient Greece throughout the space. You’ll notice tiny details like the pattern of the floor inspired by a Greek palace, and the tile behind the bar reminded me of Greek columns.”

Italian chefs bringing Mediterranean cuisine

A pivotal moment for developing Perseus was finding the right chefs in Italy—and convincing them to move to Huntsville.
“Things got really interesting when I found my chefs in Milan. I took their cooking class and 18 days later they flew to Huntsville and loved it enough to commit.
Their quality standards are high, so we are sourcing as many fresh ingredients as possible.
For this first menu, we leaned into the European side, but next week will be a completely different menu.”

They’ll have seasonal menus, using as many local ingredients as possible. Nick shared ingredients from this spread include produce from Ayers Farms and salami imported from Italy.

Everything we tried opening weekend:
- Pizza Fritta — Tomato, pecorino, basil, anchovy butter (our fav)
- Spanish Jamon Croquetas — Black garlic mayo, giardiniera
- Stuffed Eggplant — Lamb, pea sauce, loomi mayo, pita
- Tuna Carpaccio — Peach, soy honey, focaccia
- Shakshuka — Tomato sauce, eggs, crisped pastry
- Chocolate Bunet — Piedmont chocolate pudding
- Coppa or Salami Triangle — Honey mustard, cheese, pistachio pesto
- Burrata Triangle — Burrata, tomato
- Cannoli — Ricotta, pistachio, dried fruit, or chocolate

Perseus is establishing itself as a music destination in MidCity, with plans to host disc jockeys at least three nights a week for immersive listening experiences.
Opening weekend was set to the tunes of 70s jazz funk and alternative rock like The Shins, though Nick claims to be a classic yacht rock fan himself.
I’m most looking forward to “listening tasting menus” he’s planning—meals based on the vibes of different albums. (Hello, this is straight from my dreams.)

Many patrons shared their excitement to have a space like this in Huntsville, and the good news is, the best is yet to come.
“My chefs and I are looking to do many things in town together. I’d say MidCity is about 30% built out, and we’ll be happy to contribute to the growth however possible…”
