Last week, we let you in on Hattie B’s Hot Chicken opening its second Alabama location in Huntsville. Well, the wait is over! On Wednesday, December 10, Hattie B’s officially opened its doors in the new Stadium Commons on Memorial Parkway.
If you haven’t had a bite yet, keep reading for an inside look, a word from the chef and what you need to order during your next visit.
How Hattie B’s Hot Chicken got its start

Before we dig in (Sorry! That’s my last pun, I promise), let’s take a look at how the Nashville hot chicken restaurant started.
Founders Nick Bishop Sr. and Nick Bishop Jr. introduced hot chicken to the menu at their Franklin, Tennessee restaurant, Bishop’s Meat & 3, and began experimenting with their own spice blend. The dish quickly gained popularity, leading them to offer a variety of heat levels by 2011. This success sparked the idea to open their own hot chicken shop.
Hattie B’s Hot Chicken opened in the summer of 2012, right off Broadway in Midtown Nashville.
Then, its first location outside of Tennessee was Birmingham, Alabama! And we’re honored to host the second Alabama location right here in Huntsville.
“Huntsville feels like South Nashville to me, and it’s very much like being home. How lucky am I that I get to be part of this food experience in the city I grew up in?
It’s like a ‘pinch me’ moment every day.”
Chef Brian Morris, Hattie B’s Hot Chicken
What to expect when visiting Huntsville’s Hattie B’s

Because the founders come from the Meat & Three world, you can find tribute to that on the Hattie B’s menu, with items like:
- Fried Chicken: Quarter Bird and Half Bird plates cooked fresh every day and never frozen — available Southern-style, with Sweet & Smoky dry rub or in any spice level
- Sides: Choose from pimento mac & cheese, bacon-cheddar grits, Southern greens or creamy coleslaw (other options: crinkle-cut fries and baked beans)
- Southern Salad: Chicken tender bites, fried or grill in any heat level, sweet corn & black-eyed pea succotash, cornbread croutons, mixed greens, cheddar and bacon
- Classic Desserts: Peach cobbler and banana pudding topped with house-made meringue
Plus, don’t miss out on Hattie B’s Chicken Sandwich or the Jumbo Tenders Plate!
“Whether you’re ordering a classic chicken sandwich for lunch, refueling midday or kicking off a night with friends and some snacks to share, we’ve got something that hits the spot. Let’s go, Huntsville! We can’t wait to welcome y’all.”
Chef Brian Morris, Hattie B’s Hot Chicken
Bonus: You can become a true regular and impress the staff if you ask for these “secret” menu items:
- Fight or Flight: A sample of the 3 hottest flavors + ice cream to cool down
- Tendy Taco: Tender wrapped in bread with pickle, beans + slaw (the OG staff meal)
- Waffle Ice Cream Sandwich: Belgian waffles + a scoop of ice cream
